Fixe composer.lock pour PHP 8.2 (platform pin)

Le lock verrouillait des paquets exigeant PHP 8.4 (grumphp -> doctrine/
collections 3, symfony 8.1), incompatibles avec l'environnement PHP 8.2
(Dockerfile, CI). Ajout de config.platform.php=8.2.32 + régénération du
lock : composer install repasse sur PHP 8.2.
